Mac Daddy Blues and Calzone Love

Mac Daddy Blues: Kraft Mac and Cheese, Broccoli and Cheese Cassorole
Feeds up to 4
1 Box of Kraft Mac and Cheese (The Blue Box)
Shredded Cheddar Cheese
Velveta Cheese (only a few slices)
1 cup of Broccoli (cooked and cut into chunks)
2 pieces of boneless, skinless, chicken breasts (grill it)
2 slices of thick white bread, chopped into square chunks
Cassorole Dish (a few inches deep, width is up to you)

Make the Mac and Cheese (recipe's on the box, lol)
After the Mac and Cheese is ready, strain it and add the velveta cheese and a bit of shredded cheddar.
Stir.
Mix in the chicken first.
You can do this in a bowl or in the baking pan.
Then add the broccoli.
Once everything is in the baking dish, top with shredded cheddar and the bread pieces.
Bake on 425 for 15 minutes or until cheese is brown.
Great for get togethers or a warm, comforting lunch!

Calzone Love
(Calzones Know How To Party....there's your Tupac reference...lol)
Feeds 4

1 Pilsbury refrigerated pizza crust
Sliced mozzarella cheese
Shredded mozzarella cheese
Shredded cheddar cheese
Melted butter (2 tablespoons)
Marinara Sauce (add some canned diced seasoned tomatoes, make it chunky. Heat it first.)Grilled chicken breasts (two medium size pieces should do the trick; season them with garlic and italian seasoning before you grill)
Roll out the pizza crust.
Cut about 3/4 off. The excess should be enough to make a small calzone.
Put the larger piece on a greased pizza pan.
Layer sliced mozzarella, chicken, shredded mozzarella and then a bit of marinara sauce in the middle of the dough.
Fold the back piece of dough to the front and crease the dough down.
Cut three half inch vertical holes in the top of the dough, seperated by a few inches.
Brush the melted butter over the calzone.
Bake at 450 for 15 minutes.Cut into four sections and enjoy.
Leave some marinara sauce for dipping.

Creamy Alfredo Chicken and Tomato Pizza

Yo!! The SuperSoulChef is back!This is a quick but delicious recipe...one of my new favs.

Creamy Alfredo Chicken and Tomato Pizza
Feeds up to 4

1 Premade 16" Inch Pizza Crust
Olive Oil or Cooking Spray (either one works)
3 Skinless, Boneless Chicken Breasts (A marinade is optional on this one, a sprinkling of seasoning salt will do. But if you'd like, Kroger's Garlic and Herb goes hard.)
One jar of Alfredo Sauce (Ragu makes a good one)
2 Fresh Tomatoes, in slices and then sliced in half
Shredded Parmensan Cheese
Shredded Mozzerella Cheese
Preheat your oven to 400 degrees.
Spread olive oil or spray cooking spray over the surface of the crust. This helps to make a crisp crust during baking.
Spread Alfredo sauce evenly across the crust.
Sprinkle the parmensan cheese over the sauce.
Layer the sliced tomatoes.
After you've grilled the chicken, cut it in chunks and spread it out over the crust.
Then sprinkle more parmensan cheese and mozzerella over the chicken.
Bake for 15 minutes or until the cheese is golden brown.

Let cool, slice and enjoy.

SoulChef: Vol. 1

Hey y'all. These are a few joints of mine, some adapted from my Dad (Chef Randy), and some of my own creations. I'ma tomato lover, as you'll be able to tell. Enjoy! I may do pictures next time..who knows. Lol.

Creamy Tomato Basil Soup
(Feeds 4)
2 Cans of Campbell's Tomato Soup
1 Can of Basil Seasoned Diced Tomatoes
Half of a fresh tomato, diced
Milk (to taste)
Add milk to soup, however much milk you like.
After the soup has simmered for about 15 minutes or to a slow boil, add the canned and diced tomatoes.
Stir until the tomatoes are mixed in.
For presentation, serve in a bowl with croutons and shreded parmesan cheese.

Unfried Chicken Parmesan Sandwich
(Can Feed 2, depending on your appetite)
1 Skinless, Boneless Chicken Breast (I use Kroger's 30 Minute Marinade: Herb and Garlic. Works well for this recipe.)Half a jar of Marinara Sauce (I suggest Emeril's Homestyle Marinara. It goes hard.)
Butter
Italian Seasoning
Garlic Powder
2 Slices of any Thick White Bread (Sandwich sliced French works, I use a bakery style sourdough.)
Sliced Tomatoes (optional)
Shreded Parmesan Cheese
Shreded Mozzarella Cheese
Sliced Mozzarella Cheese

Grill chicken until cooked through.
Heat marinara in a sauce pan until it's warm.
Mix butter, italian seasoning and garlic powder together.
Spread on one side of each slice of bread, and toast in a pan until the buttered side is golden brown.
Sprinkle the shreded cheeses on the unbuttered side of each slice of bread.
On one slice, place the chicken.
Pour the sauce over the chicken (however much you like).
Put one slice of mozzarella cheese over the chicken and one on the other side as well.
Bake until brown.
Dress with sliced tomatoes, if you like.

Cut in half. Works for lunch or for dinner with a salad or some sauteed veggies.
